Growing up, I used to hate cabbage! I mean seriously was there anything worse than coming home to your mom whipping up a plate of cabbage.... Nope. A Quick And Easy Dinner- Chana Masala
People tend to have quite a few crazy ideas about Indian food. They think it all tastes the same and takes days to make to start off with... Well, this mom of 3 (about to be 4!!!) is all about quick and easy. I need recipes that make my life easier!Today, I'm showing you a simple vegetarian dish that will make your bellies thank me!All you need is a few ingredients and you're off! It hardly takes anytime at all! You can serve it alone with a chapati or serve up some Karahi Chicken with it! Guess what... It's even kid approved!Heat the butter over medium heat. When the butter has melted add in your onions and jalapeño.When these have browned add in your ginger garlic paste. Cook for 1-2 minutes. Add in your coriander, cumin, and turmeric. Allow these to cook together for another 1-2 minutes.Stir in your tomato and cook for five minutes.Add in your potatoes, chickpeas, and water. Turn up the heat to medium/high heat. Bring to a boil. Reduce heat and simmer.Sprinkle in the garam masala, salt, and squeeze in your lemon juice. Allow all of the ingredients to simmer until the potatoes are tender.Serve with rice or next to another one of your favorite Indian main dishes.

Authentic Tandoori Chicken
One of the things I've learned over the years in Indian culture is how important it is to spend quality time with your family. It could be around a camp fire at night, playing family board games for hours, or just about anything that brings everyone together. One of the favorite ways to get everyone together is around the dinner table. I have had more meaningful conversations with my hubby and his family around the table than anywhere else.There's something about breaking bread with the people you love.This is exactly why I've gone out of my way to learn how to make Indian food with my in laws. I've always wanted them to know how important their culture is to me and I even saw my own love for Indian culture grow as I became more invested.Now, my husband and I find ourselves in our own kitchen teaching all of our friends how to make Indian food and having the time of our lives in the process!
Grilling Adventures
The good weather means we take the party outside.Of course our family has to take it up a notch and we look for Indian dishes we can grill!Tandoori chicken is always a family fav in our house because Joel does it all on his own! Well, he tries until the kids all go out to help! They're all turning into little grill connoisseurs. I love it because it means I get to sit outside and enjoy the sun while the boys slave away at dinner!Tandoori chicken is delicious and so simple to make. It marinates overnight and then you can pop it on the grill with some fresh veggies. Introducing Your Baby To Indian Food
One thing I've learned about parenting is there are so many ways to do it. While we all think our way is best, it's not always the case. If you were to visit moms from around the world, you would see just how differently they raise their little ones. If you look a little closer to home, you'll still see big differences in parenting styles.What about food?A lot of moms think the only way to feed your kids is to start with the bottle, then rice cereal proceeded by vegetables, and ending up with table food. What if I told you that you could change it up a bit and make it more interesting and healthier for your kids?I introduced my children to Indian spices right away. When they were in the adorable squishy stage (you know the stage I'm talking about), I started them off with rice and butter. I added about 2 extra cups of water to the rice, so it soaked it all in and turned into more of a paste. Adding butter is a great way to sneak in dozens of vitamins and anti-oxidants into your child's diet.As they get a little older, we start adding in steamed vegetables and spices. Getting them used to different spices at a young age helps to get their palate used to it. Not to mention all of the health benefits them.
Turmeric
Turmeric is used in every single Indian dish. It's added to the base to add a rich color and people are becoming obsessed about it. A lot of health gurus are even recommending turmeric pills. Which of course my in-laws always laugh over and say people should all just start eating Indian food!Why is it so good for you? It's full of antioxidants, it's an anti-inflammatory, it helps reduce cholesterol, it's full of vitamin B, and has been said to help prevent cancer cells from growing.
Chili Powder
Before you skip over this section thinking I'm crazy, hear me out. Chili powder is full of antioxidants, vitamin C, vitamin A, helps to detoxify the body, enhances your metabolism, rich in potassium, and adds delicious flavor!We started adding chili powder at a young age. We started extremely small and increased as they got older. Now, they eat dinner with the rest of us. While we may still make our meals a little milder, they love it and have a great pallet for spicy food. You could even add a little yogurt as well and counteract the heat, but keep all of the health benefits.
Yogurt
Yogurt is the number one item I recommend to all parents. Especially homemade yogurt because it's full of healthy bacteria your body needs to build up its defenses against infections. Often times, our kids end up on antibiotics frequently which kills off a lot of good bacteria. This helps them get it all back. It's also full of vitamin D, vitamin B, helps prevent high blood pressure, and helps build strong bones.

Carrot and Pea Curry
1/2 cup of peas1/2 cup of carrots1/4 tsp curry powderpinch of cinnamonCook your peas and carrots in about an inch of water until they are tender. When they are done spoon your vegetables into a blender. Add in your spices and pour a small amount of the water in from the saucepan until it almost covers the vegetables. Blend until everything is well combined and no chunks are remaining. If you would like to to be thinner, add 1/4 cup of water at a time.
Chicken Biryani
Pinch of cinnamonPinch garam masalaPinch of chili powder1/4 cup cooked chicken1/4 cup cooked rice1/2 cup chicken brothAdd the chicken, chicken broth, and spices together in a blender. Blend until the chicken is there are no chunks of chicken left. Add in your rice. Give the blender a few quick pulses, just enough to break the rice down a bit. You still want rice chunks in the baby food.What was the first solid food you gave your kids?

Almond Chicken Curry With Utha
Welcoming our first guests in our new home!
We've been in our new home for about a month now. It's been a crazy ride moving to North Carolina, but we're already loving it. This week we even had my sister in law and her husband come visit!Krystal and Will have been married for a little over a year now and also have an interracial marriage like my husband and I. It's been so much fun watching them navigate multiple cultures and seeing how eager and excited Will has been to dive into Indian culture.My kids have been counting down the days until Krystal-utha and Will-mama get here. They couldn't wait to show off their new house and spend time with some of their favorite people. The kids even planned out their whole time here!
Cooking With Utha
One of the things Liam was the most excited about was to help Krystal-utha make almond chicken curry!Trust me, it's as good as it sounds! If you've had Indian food before, chances are you've tried chicken curry. This dish has a little twist to traditional chicken curry because my sister in law adds a few unique ingredients.I love learning how to make different Indian dishes because the person making it always has a unique touch. My mother in law uses coconut in her chicken curry and my father in law uses tamarind. They're all delicious but you can always tell who makes it!
Liam is always my little chef in the kitchen.
He wants to know how to make everything and always asks to try it on his own. Now, I have a nit of nostalgia when it comes to Shan spices. When my husband and I first got married I had no idea how to make and Indian dish. My first experience was horrible! I spent an entire day shopping for spices and prepping to make chicken curry. Let's just say my husband was excited all day and the moment we sat down for dinner... you could just see it in his face.
He was trying not to laugh because he knew how hard I tried, but wow. It was even the wrong color! Instead of finding a traditional Indian recipe, I looked online for the simplest one I could find. I didn't even go to the Indian grocery store for spices! I went to our local grocery store. Needless to say I learned my lesson.
The biggest thing I learned through it all is the importance of good recipes and authentic spices. Whether you have made a ton of Indian dishes or you're a novice, Shan Foods is the perfect thing for you. They combine all their spices in a simple to use package. They even have a recipe on the back!
I wanted to show you just how easy it could be and I was looking for an excuse to try out a new recipe!
This has become one of my new favorite Indian dishes. It's called Pav Bhaji and wow. Think Indian sloppy joes with delicious veggies!
You create your delicious Pav Bhaji mixture and then put it in a buttery bun. This dish is famous where I live and people go crazy to find the best rolls or buns to serve with it!
This is the time to pull our grandmas famous roll recipe!
Simple Pav Bhaji Recipe
Ingredients:
4 Medium Potatoes1 Medium Tomato3/4 Cup Green Peas1 Onion Chopped1 Green Chili1 Cup Cauliflower1/2 Green Pepper Chopped1 Tsp Cumin Seeds1 Tbs Ginger Garlic Paste3 Tbs Shan Pav Bhaji Spice Mix (You can order this online or at your local Indian grocery store)3/4 Cup butter
Directions:
Roughly chop your potatoes and cauliflower. Add it to a large pot along with your peas and enough water to cover your vegetables. Cook until tender and then roughly mash. Set aside.In a bowl mash your green chili and ginger garlic paste until the chili becomes a paste. Set aside.In a pan heat your butter until melted. Then add in your cumin seeds. Cook them until they start to splatter or pop. Add in your ginger garlic paste mixture. Cook for two minutes then add your Shan Pav Bhaji Spice Mix.Add in your onions and green pepper. Saute them until your onions are translucent.Add your tomatoes and 1/2 cup of water. Cook your mixture until the tomatoes have been cooked well and the water has cooked down. You don't want a water mix, you just want the water to help cook the tomatoes completely.Mix in your roughly mashed veggies. Add salt to your taste.Voila! You're done! Now you just need to put it in a delicious butter bun and garnish with coriander, lime, and onions.

Culture Clash Wednesday #8 Taste Buds
Last week, I offered three more entries into my Ultimate Spice Giveaway by taking a survey (only a few more days to enter!). This survey helps me see what all of you have enjoyed on my blog and what you want to see more of. There was a HUGE consensus.... You all love culture clash Wednesdays!! I'm so glad you are all enjoying because it has been such a fun series!This week were talking about taste buds. I think many of you will be able to relate to this one.. Food is one of the biggest passions in our house. This could be because we have an almost Indian family or because it's full of boys. I've always heard the way to a boys heart is through his stomach and I can tell you it's the same for Indians! We're always experimenting and trying new dishes! However, a problem always comes up... Can you guess what it is?? My husband and I can never agree if it's too spicy or too bland! Usually, I will love a dish and he says it's a little bland and needs more heat. On the other hand, he will have a dish and love it. All while I'm sweating bullets because it's so freaking spicy! Now, our kids are joining in on the fight. Liam thinks pepper is too spicy and Levi can handle his spicy food. This is probably why my husband loves visiting his family. It's typically a weekend full of spicy Indian food. My first few years in the family, I would get teased because I'd always have a glass of milk with dinner! I'd get the biggest glass possible because I knew how ridiculously spicy everything was going to be! It's been six years now and I never pour a glass of milk with dinner. Is this because I'm almost Indian and can handle my Indian food or is it because my pride kicked in and I won't ever let them know how badly my mouth is on fire? The world will never know... For the most part, we all love spicy food. It's just the level of heat we don't agree on. We've learned a few tricks over the years to make sure we're all in love with dinner. We've all trained our taste buds to handle some heat. We serve dinner and all sit down at the dinner table. If you look at our table, we will always have multiple kinds of hot sauce. We have hot sauce for every type of food we make too! We have hot pickled vegetables for Indian food, Cholula for Mexican food, and Sriracha for Asian food. This way we can all add the right amount of spice and I don't die from it!

Family Fridays #7 Raita
Yesterday, I shared about a new find of mine. I found an amazing company called Bhumroo Kids. They sell products to teach children about the world. They were kind enough to send us a box this month. It was full of goodies that taught my boys about India. Obviously, my boys loved it. They were able to see how far our family is that live in Hyderabad, listen to fun Bollywood music, do some crafts, and make a new recipe!Today, I want to share their delicious raita recipe. Raita is a mixture of yogurt and a few ingredients to make it even better. It's perfect to cool the spicy flavors of different Indian dishes. Ingredients:1 large cucumber2 cups of whole milk yogurt1.4 cup of chopped mint1 tsp ground cumin1/4 tsp of cayenne pepper or chili powder1 pinch of saltDirections:Wash the cucumber. Grate the cucumber and cut it into small pieces. Mix together the cut cucumber, yogurt, cumin, cayenne or chili powder, and salt. Add the mint to the top. Keep refrigerated until you're ready to serve. This is great with keema, meat curry, chicken tikka, and pretty much any Indian dish. Yum!To find our more about Bhumroo Kids, check out their website!
Meal Plan #1
We all have little things we do that make our weeks go just a bit smoother.For the longest time this was sticky notes for me. I would have sticky notes spread all over my room. They would have little reminders, ideas, bible verses, inspirational quotes, etc. It helped to put all of my ideas on paper. When I met my husband, my technology obsessed husband, he helped me transition from sticky notes to a computer. Little does he know, I found an application on my computer that allows me to have little sticky notes on my desktop. After I had kids, I realized sticky notes wouldn't be enough to organize the daily chaos in my life. I needed something else, so I started meal planning. It was perfect. I could look at my plan and see what prep work it required and how soon I needed to start the prep. Before I started meal planning, I wouldn't decide on what to make for dinner until four and then it wouldn't be ready until six or seven. This was difficult because my kids go to bed at seven. It created a lot less stress in our evening routine to have dinner ready and prepped at a good time. Do you want to try a meal plan? Outside of the bungalow they were staying in, there was a chinta chiguru plant (tamarind plant). When it would blossom the kids and I would climb the tree and each gather an arm full of the tamarind plant. We would rush it back to Ummamma and she would make the best chinta chiguru mamsam.
