Over the years, I've become increasingly obsessed with Indian food. My husband and I got together and he showed me just how amazing Indian food could be. Then I decided to learn how to make it.The journey to being able to make Indian food was hard! I'll never forget the first dish I made. I decided to surprise my husband with chicken curry one night. He called on his way home from work, asking what I was making for dinner. I told him and you could hear how excited he was right away.I spent all day getting the ingredients, finding a good recipe online, and prepping the dish.When he got home, he expected to instantly smell delicious chicken curry when he opened the door. You could even see him inhale as he walked in. However, his face didn't show the excitement I was hoping for. He looked confused.He walked over to the pot simmering on the stove and turned his head.As we sat down for dinner he took a bite and oh so graciously asked what I used to make it. He said it didn't taste like his moms and he was curious if I used the right spices... Dessert overall is delicious, but Indian desserts... Come on. They're delicious!Lately we've been making kheer. It's a delicious and simple to make Indian rice pudding. You can make it with rice or vermicelli like we do.The best part is the day after we make it. We usually make enough for one night and a bit extra. The next day everyone starts hiding the leftovers in the fridge and by everyone I'm including my husband! He and the kids start hiding it behind whatever they can in the fridge so the rest of them thinks it's gone.Then the lucky winner sits down with a cold bowl of vermicelli kheer while the rest of them gawk and beg for a bite!

Khichidi Recipe

IMG_3638The sun is here. It's here at last!! My kids run outside as soon as they see the sun. they took it a step further this week and decided to get the sprinkler going... In 60 degree weather! Hey, that's swimming weather in the Pacific Northwest. We sat outside all day. With my iced coffee in hand, I watched them run through the sprinklers and try to convince the dog to go with them!IMG_2582 IMG_2341Making a big, complicated dinner was out of the question. Instead we managed something a little more simple and tasty! What is it you ask? Khichidi. It's so good and really good for you. You know you want to try it out. IMG_2506Ingredients:

1 c. red daal
3 c. rice
1 small onion or small handful of chopped onions
1 green chile chopped
1 broken cinnamon stick
4-5 cardamom seeds
Palmful of salt
Butter
Optional: 3-4 curry leaves
 
Directions:
 
Add daal and rice to the rice cooker. Wash. Drain. Add 6 cups of water.
 
Heat a pan to medium heat. Add butter and oil (enough to cover onions). Add onions and saute until golden brown. Add the cinnamon, cardamom, curry leaves, and green chile. Cook 1 minute. Turn to low. Add ginger garlic paste and turmeric. Cook for 5-8 minutes. Mix in with rice and cook in the rice cooker. 
 
If you want the rice a little firmer add less water.
 
This is a delicious meal and you can serve it with a dollop of yogurt

Summer is almost here! My favorite season in the Pacific Northwest is definitely the summers! It's perfect outside! My family and I have been soaking it up. We had a Mother's Day Tea, which was the cutest thing ever! We went to the funnest park around! Then of course some good old thumb sucking.  The other reason I love summers is that it's the perfect time to host dinner parties! My husband and I love inviting people over to indulge in some delicious Indian food.Most of our friends have always either loved Indian food or super excited to try it. I quickly stumbled upon a routine for our get togethers. How To Cook Indian Rice

What is the one dish anyone should be able to cook without screwing it up? Ok, besides toast? Rice in a rice cooker is the easiest thing out there to make. Well, for most people. I, on the other hand, managed to screw it up when my father in law came to visit. He let me know what I didn't add enough water and that I should watch him make it. It was like getting yelled at in front of your friends, getting smacked in the head in front of your friends by your mom, or tripping in front of everyone at school. I wanted to impress Joel's dad and let him know what a connoisseur of Indian food I had become. Instead I screwed up one of the easiest dishes there is. I watched him and tried to figure out what I did wrong.... A lot. First of all, you have to wash the rice. What the heck! Wash rice. This is what Basmati and Jasmine rice look like when you put water in it. IMG_2385The water is cloudy and definitely doesn't look clean. You have to fill it up with water and rinse it out until the water is clear. IMG_2392All of the surface starch gets washed off of the rice when you wash it. Joel says he has horrible memories of washing rice all through out his childhood. Torturous really. The kitchen chore I hated the most growing up was peeling potatoes. Your hand starts cramping up after the third potato and you think you will never be able to open your hand again. He then explained to me the water to rice ratio. I followed all of his advice and made proper Indian rice from then on. Then I made it for my mother in law. Yet again, there was something wrong. Apparently they disagree on the water to rice ratio! At this point I had to go with the larger consensus. I asked his aunts how they do it and the ratio they all agree on is 1:1. The other little detail is to make sure you have PLENTY of it. It's never fun when you run out of rice during dinner!If you want to impress a few of your Indian friends, make rice this way!

Pappu Recipe

At what temperature do you send your kids out to your sprinkler or kiddie pool? I lived in California for about ten years and swimming weather there is completely different than swimming weather here. There it would be at least 90 before you'd even consider swimming. Here in the beautiful Pacific Northwest... Well, it was 70 today and my kids were outside in the sprinkler and pool. Crazy?  Yes, but they loved it and I know countless other kids were doing the same thing here. IMG_2305 IMG_2307We also made some yummy pappu! Which was also one of the very first Indian dishes I learned how to make. It is a delicious lentil dish that you serve with rice. It's easy to make and everyone I have ever made it for loves it. Do you want to know another great thing about this dish??? It's gluten free! I have a few lovely friends and family members that are gluten free and this is a go to dish when they come over. Their are a few different variations of this dish. The one I make was taught to me by Joel's dad.IMG_2325Ingredients:2 dry red chilies (you can also use red pepper flakes if it's all you have)1/4 an onion chopped2 tbs butter 3 tbs olive oil1 tbs black mustard seeds1 cup lentils (I use urad daal)1 chopped tomato1 tsp turmeric1 tsp chili powder4-6 cloves of garlic diced finely5 cups of water1 tsp salt1 tsp cumin seedsIMG_2333Directions:Wash your lentils. Put the lentils in a bowl and fill it with water. Use your hands to mix it all around. Strain the water and repeat until the water is clear.In a medium sized pot, combine your water, onions, turmeric, chili powder, and lentils. Cook on medium/high heat. Cook the lentils until they're soft. Next, use an emersion blender or an actual blender. Blend all the ingredients until smooth. Your mixture should be the thickness of a good hearty tomato soup. Put the mixture back in the pot and keep it on low. In a separate small pot, heat your oil, butter, and garlic on medium heat. Once the oil starts to bubble add your dry chilies,cumin seeds, and mustard seeds. Turn it to medium low and stir. The garlic cooks quickly so you want to make sure you are watching. When the mixture turns golden, add it to your lentil mixture. Add some salt and your tomatoes.Cook on low for about 20 minutes and serve with rice.
